for the mediterranean in all of us

Sam did great this year with Christmas gifts --- and one was even from my long standing wish list ... a Cuisinart Mini Prep food processor. Brushed silver too, if you please. That in itself is lovely but I've been especially hankering for a Mini Prep lately so that I can whip up some homemade hummus of my own. Not too much selection here in Swift sometimes and well, I'm a firm believer that homemade is always better anyways. {Thanks Mum for that influence!}

So whip up today I did. And all I have to say is ... I'm sure all of you wish you were here too! Yummo. I'm willing to share my fabulous recipe so here goes. Eat your chickpeas, people!

Hummus

1 15- to 16- oz can garbanzo beans (chickpeas), rinsed and drained
1/4 cup tahini (sesame seed paste)
3 Tbsp water
2 Tbsp lemon juice (more to taste)
1 Tbsp extra virgin olive oil
1 clove garlic, halved (of course I had 2!)
1/2 tsp kosher or celtic sea salt
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1 Tbsp chopped fresh flat-leaf parsley (I didn't have any, so I did without)

1. In a food processor (yep, check!) combine all ingrediants except parsley, if using. Cover and process until smooth. Transfer to a medium bowl and stir in parsley and extra lemon juice if needed. Serve with slightly toasted pita bread or vegetable dippers.

YUM! I love hummus. I have a Cuisinart mini prep too and I have had such trouble with it. It chops my onions down to juice. I usually opt to chop by hand. I wonder what I'm doing wrong??

sounds yummy ... I just made a batch of choc chip cookies that have chick peas in them and they were delicious! even the kids gobbled them up!

alright...I'm gonna give your recipe a try..I haven't made hummus yet, I look forward to it!! I don't have a mini prep though, I'm going to try it in my trusty blender, which is used everyday for making pureed baby food...we'll see how it works.
